🍍Pineapple Upside-Down Cake 🍍

I am back this time with this simple yet delicious Pineapple upside down cake recipe!
This sweet treat is a great 'pick me up' and a perfect cheat day treat! Let's get baking!


Prep time: 10 min  | Baking  time: 30 min  


Ingredients: 


   Cake:

  •  3 eggs
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pineapple juice
  • 2 tsp pure vanilla extract 
  • 1 and 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp cornstarch
  • 1/4 tsp salt

Toppings:
  • 3 tbsp unsalted butter, room temperature. 
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract 
  • 1 pineapple rings can
  • raspberries or cranberries.

Method:

  1. Preheat oven to 350 degrees. Generously coat 9 inch round cake pan with butter or non stick cooking spray.
  2. Mix together the dry ingredients, flour, baking powder, cinnamon, salt and cornstarch, set aside.
  3. Crack the eggs into a mixing bowl. Add in granulated sugar, brown sugar, and vanilla extract and whisk until smooth consistency.
  4. Gradually add the dry ingredients into the wet mixture, until well combined.
  5. Toppings: In a small sauce pan,melt butter over medium heat, then add the brown sugar, vanilla extract, and salt. whisk constantly for 1 minute. Remove from heat.


6. Add the brown sugar sauce to your cake pan, spread evenly. Then place the pineapple rings on top, and place raspberries or cherries in the middle of each pineapple ring. Add the cake batter on top.


7. Pop it in the oven for 30-40 min or until the top is golden brown. Insert a toothpick in the centre of the cake until it comes out clean!
8. Remove from the oven and let it cool for 10 min. Place a plate on top and quickly flip it over!
9. Serve cake warm, along with ice-cream (optional) or on its own!
